When you press the idroprep onto the ground coffee, the very soft gel behaves very similar to a liquid.
According to the hydrostatic principle, the pressure in the gel pad – and thus on the entire surface of the coffee – must be the same everywhere. The coffee is compressed evenly for a very even and balanced extraction.
