Yirgachefe (Yirga Chefe) is the major town, located in  South-Central Ethiopia. I forms part of the Gedeo Zone, bordered on the south by Kochere, west  by the Oromia Zone, north by the Wonago, east by Bule and south east by Gedeb.

Ethiopia is often celebrated as the birthplace of coffee, with a rich history and deep cultural significance tied to its coffee production.  Indigenous Ethiopian coffee is the most genetically diverse of any growing region in the world and this means that it plays a crucial role in the resilience of coffee cultivation around the world. The genetic diversity and the unique agro climates contribute to the unique and complex flavours of Ethiopian coffee. Regions like Guji, Sidamo, Yirgacheffe, and Harrar are particularly famous for their distinct profiles, which can range from bright and floral to winy and fruity.

Grade

Washed Ethiopian coffees are typically of very high quality with unique flavours such as sweet lemon and florals, and an ideal balance between acidity and body. For Ethiopian coffees, ‘Grade 2’ signifies that the coffee is washed and that it has a very low defect count – between 4 and 12 defects in a 300 gram green sample. Typically the quality of washed coffees is more consistent than that of natural coffees.
